We make scones a lot in our house. At least once a month. Who can go wrong with cake and cream for breakfast? Ever since Mr. Riley and I went to Ireland and England, they have been one of my favorite breakfast foods.
1 3/4 cups flour
2 1/4 tsp baking powder
1 TBS sugar
1/2 tsp salt
1/4 cup butter
1/3 cup cream
egg and sugar for top
Put the dry ingredients in one bowl with the butter and combine with a pastry blender.
In a separate bowl combine the eggs and cream.
Pour the cream mixture into the dry mixture and stir until mostly combined.
Dump the whole lot out onto a floured surface and use your hands to combine. Don't overwork the dough, you just want it to stick together.
Roll or pat into desired thickness. No more than a half inch.
Cut into desired shapes. I was making these for entertaining so I made small size rounds for easy serving. For family I will just pat out a large circle and cut wedges.
Now, you want to beat an egg in a dish and brush the top of each scone with the egg. Then sprinkle granulated sugar over the top. This makes a sweet yummy crust on the top. (I totally forgot to photo this step)
Bake in the oven for 10 to 15 minutes at 450 degrees.
Serve with butter, jam, lemon curd, and/or sweetened whipped cream. You can also add all sorts of things to your dough: craisins, currants, raisins, blueberries, chocolate chips.
Other than homemade, Bonne Mamman is our favorite jam. We also use the jars for our drinking cups.
