Wow, I can't believe I missed a day of blogging. I try to do Mon - Fri, but yesterday was just too beautiful to sit in front of the computer! I've also been getting lots done around the house. Dropped off a load at Goodwill yesterday, and have two boxes of clothes to give away today. And work on the boy's closet is going well.
But I have not been sewing at all. So here is a yummy recipe that is a holiday tradition in our family. Any holiday. I got it from my mother-in-law, and she calls it "Coffee Cake", but it's really more of a pastry/kringle.
For the dough:
2 sticks (1 cup) of butter
2 cups flour
1/2 tsp salt1/2 - 3/4 cup sour cream
Favorite pastry filling. We traditionally use Solo Apricot Filling, but you can use what your family likes!
Combine butter, flour, and salt with a pastry blender, or fork until crumbly. Stir in enough sour cream to hold the dough together. It shouldn't be too sticky. Put dough in fridge for an hour or overnight. I find it's easier to work with when it's been chilled.
Take the dough ball out of the fridge and divide it into four equal pieces. Roll out one piece on a floured surface into a long rectangle.
I doesn't need to be perfect. You can trim up the ends so they're even.
Spread out your desired filling across the dough.
Fold up the ends.
Fold in the sides to meet in the middle. It doesn't matter if they match perfectly. It will be covered with frosting! Repeat these steps with the other three pieces of dough - or save them for another day.
Bake in a 375 degree oven until it looks something like this. Nicely browned.
While this cools a bit we are going to make the frosting. I just mix up powdered sugar, milk and vanilla to a nice spreading consistency. We color it for holidays. For upcoming Easter, it will probably be yellow. Spread the frosting over the baked 'coffee cake', sprinkle on some chopped nuts.
You can serve it warm or cold. We love to eat it hot around here, but it gets pretty messy. It will hold up much better if you let it cool.

A couple of notes. I have made this with blueberries, like you would a pie, and it turned out pretty good.
I have sent it to work a few times with Mr. Riley. If he says the flavor is apricot, or if it has nuts on it, hardly anyone will eat it, but if he keeps quiet, and I keep off the nuts. It always disappears.

I'm actually salivating while reading this post and looking at your scrumptious coffee cake - mmmm what I wouldn't give to have a piece right now! I'm such a sucker for baked goods (and bread!)
