Recipe Day - Stromboli

This recipe is from my mother-in-law.  When the kids ask what it is, I call it pizza, with the crust on the outside.  

Stromboli

For the Dough:
1 pkg yeast (or 2.25 tsp)
1/4 cup warm water
2 Tbs olive oil
2-3 Tbs sugar
1/2 tsp salt
1/2 - 3/4 cup boiling water
3 1/2 cups flour

For the filling:
Pizza Sauce
Mozzarella cheese
1 lb or so Italian Sausage
1 cup sliced mushrooms
1/2 cup diced onions
Or anything else you like in/on a pizza

Directions:
Heat the oven to 350 degrees.  Dissolve the yeast in the 1/4 cup warm water In a large bowl.  Add the rest of the ingredients to make the dough, saving the water for last.  I start by adding in the 1/2 cup and as I mix, if the dough is too dry, I will add more water to make it workable.  The dough should not be sticky. It needs to be firm enough to roll out.  If it gets too sticky, add flour.  Roll out your dough into a rectangle, approximately 11 x 14.

 Once your dough is rolled out, layer your filling.  I do pizza sauce, meat, onions, mushrooms, and cheese on top.  This particular version also has pepperoni and olives.  And I forgot the onions, until it was sealed.
 Turn up the short edges like so:

Then fold over the long sides to meet in the middle.

 Pinch closed the ends and where the dough meets.  At this point you can try to flip the whole thing over onto your baking sheet to cover the seam, or not.  I didn't bother this time. 
 Bake in oven for approximately 45 minutes.  Or until a nice golden brown.  If yours leaks sauce and cheese out a hole, don't feel bad.  In all the years I've been making these, I only had one not leak.

We make something similar to this: Lay out the ingredients on the dough (over the whole thing, not just in the middle) and roll it up like a jelly roll. We call it a Pepperoni Roll. I'll try your version next time. We like calzones and this looks like that.
